Pickup at the counter
For buyers who come to you.
Add a shipping method of the type Pickup under Settings, Shipping. It needs no country and no address: a buyer who picks it up types no address at all.
Give it a price of zero, or charge for it if you want to.
Your instructions (opening hours, where the door is) sit on the method and show at checkout and in the confirmation mail.
The flow is Ready for pickup, which mails the buyer, and then Picked up when they have been. Both show on your dashboard so nothing sits forgotten behind the counter.
